Happy House Cookies

Mom Tip: always have cookies on hand, especially when friends are over! 🍪

I call these the Happy House Cookies because our whole house is stoked on them! They have a great chewy texture and taste AMAZING.

I’ll let you in on my secret ingredient. 😁 It’s Primal Kitchen Chocolate Coconut Collagen Fuel! I love adding this because it gives the cookies an added protein boost (to balance out the sugar and chocolate haha) and so I don’t feel as bad about eating them. It also adds some extra chocolatey flavor, which I’m always in the mood for!

These are great for movie nights, entertaining, parties, or just to keep in the fridge for when you need a little bite of dessert.

So, let’s make them!!

Ingredients:
  • 1 cup of Butter
  • 1 cup of sugar
  • 1 cup of brown sugar
  • 1 cup of Macadamia nut butter (or peanut butter)
  • 1 tsp vanilla
  • 2 eggs
  • 1.5 cups of flour
  • 1 cup of Primal Kitchen Chocolate Coconut Collagen Peptides
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1.5 cups of oatmeal
  • 1.5 cups of shredded coconut
  • 1 cup of chocolate chips
Directions:

Preheat oven to 350* Cream together the butter and sugars. Mix in nut butter. Add eggs and vanilla. In a separate bowl, mix the flour, collagen, baking soda, salt and baking powder. Combine oatmeal and shredded coconut with the dry ingredients. Add the dry ingredients to the butter mixture. Mix well. Then fold in chocolate chips. Bake 8-10 minutes

Now that they are ready, serve them up for the whole house to enjoy!
